Coffee is one of the world’s most popular beverages, most people claim it is the most widely consumed liquid in the world aside from water.

Coffee’s success as a beverage undoubtedly is owing both to the caffeine it harbours and to its sensory pleasure. Coffee lovers come to associate the energizing lift of the caffeine with the richness and aroma of the beverage that delivers it. For centuries, coffee has played a far more important role in the world than most people realize.

This hot drink is usually made by mixing an Arabica Robusta coffee blend with roasted chicory, ground aniseed cloves. One can also add some orange or tangerine peel / zest but this is completely optional.

Chicory has long been used in many cultures as a coffee substitute, especially when coffee is difficult to get. But chicory is still used today to make coffee bolder, adding an element that even the expensive coffee blends can’t achieve.

How to cook

One would need an espresso pot or a coffee percolator. Place 5 tablespoons of our ready-made mixture of Maltese coffee in the pot. Fill the boiler with water and leave for about 30mins. When placing this mixture in your pot, press the coffee with the back of a spoon. The tighter you press the coffee the tastier the coffee will filter.

Once it is ready pour into a mug and serve it while it is hot. One can add some orange or tangerine zest but this is completely optional.

The Maltese Coffee mix can be bought from It-Tokk Gozo Traditional Food outlets, on our online shop or from authorised re-sellers and is available in confections of 400g.
